Mussels with tomatoes and cucumbers


Calorie for 1 person: 248 kcal


INGREDIENTS

5 l of moulds

2 cucumbers

3 large tomatoes

15 cl of white wine

2 tbsp oil

1 shallot

salt, pepper


PREPARATION

STEP 1

Ebarbez molds. Peel and cut the cucumber into small cubes. Wash and cut the tomatoes into small cubes. Peel and chop the shallots.

STEP 2

Heat the oil in a soup pot. Have come back the shallot without colouring and stir. Add the mussels. Salt and pepper, mix well, then pour the white wine. Cover and cook 5 minutes.

STEP 3

Then add the cubes of tomatoes and cucumbers. Stir and cover again. Continue cooking for 10 minutes.

STEP 4

Remove the mussels from the pan with a slotted spoon and keep them warm. Bring the broth to a boil and let it reduce by half.

STEP 5

Divide the mussels in some dishes, water them juice cucumbers and tomatoes. Serve immediately.
